Wake up and shine with these yummy breakfast treats!

Who doesn’t love muffins? They are an all-time comfort food, and when the weather starts getting cooler, these make for a moreish breakfast treat slightly warmed and pair with a hot cuppa! Morning Glory Muffins are loaded with wholesome ingredients, are high in protein, full of fibre, lower in carbs, full of good fats and to top it off are also incredibly satisfying. Better yet they tick all the right boxes - gluten free, dairy free, refined sugar free, but definitely not flavour-free!   

 

Morning Glory Muffins  

Gluten free ∙ Dairy free ∙ Refined sugar free 

Time: 40 mins   

Serves: 12 muffins  

 

Ingredients: 
  • 1 ½ cups almond flour  
  • 1 cup gluten free flour  
  • 1 serve (2 scoops) Clean Lean Protein Smooth Vanilla  
  • 2 tsp baking powder  
  • ½ tsp baking soda  
  • ¼ tsp salt  
  • 2 ½ tsp cinnamon  
  • ½ cup grated carrot  
  • ½ cup grated apple  
  • ½ cup crushed pineapple  
  • ¼ cup walnut pieces  
  • ¼ cup sultanas  
  • ¼ cup shredded coconut  
  • Zest & juice of 1 orange  
  • 1 cup golden brown sweetener (or xylitol + ¼ tsp molasses)  
  • 1/3 cup avocado oil  
  • 4 eggs  
  • 1 tsp vanilla  

 

Method: 
  • Preheat the oven to 160 C fan forced or 180 C conventional.  
  • Add all the ingredients (except the orange, golden brown sweetener, avocado oil, eggs & vanilla) to a large bowl & mix well.  
  • Blend the orange, golden brown sweetener, avocado oil, eggs & vanilla together in a blender & pour over all the other ingredients in the big bowl.  
  • Mix well & allow the muffin mixture to stand for 5mins.  
  • Line muffin trays with baking cups/cupcake liners, this recipe makes 12 regular muffins.  
  • Spoon the muffin mixture into the muffin trays & place in the oven for 20-25mins.  

 

Pro-tip! If your oven is quite hot, you might find it best to bake these muffins for half the time before then covering with a baking tray or foil for the second half of baking time to avoid burning.  

 

Allow the muffins to cool completely before you eat them.  Enjoy with a delicious cup of mushroom coffee for a warm and nourishing breakfast!
